Ingredients:

2 large eggs
4 slices of bread (your choice of type)
2-3 tablespoons of mayonnaise
1 teaspoon of mustard (optional)
Salt and pepper to taste
Lettuce leaves (optional)
Tomato slices (optional)
Pickles or cucumber slices (optional)
Instructions:

Boil the Eggs:

Place the eggs in a saucepan and cover them with water.
Place the saucepan over high heat and bring the water to a boil.
Once boiling, reduce the heat to a gentle simmer and let the eggs cook for about 9-12 minutes for hard-boiled eggs.
After the cooking time, immediately transfer the eggs to a bowl of ice water to cool and stop the cooking process. Let them sit in the ice water for about 5 minutes.
Peel and Chop the Eggs:

Gently tap the boiled eggs on a hard surface to crack the shells, then peel them.
Once peeled, chop the boiled eggs into small pieces. You can use an egg slicer for even slices if desired.
Place the chopped eggs in a mixing bowl.
Season and Mix:

Add mayonnaise and mustard (if using) to the chopped eggs.
Season with salt and pepper to taste.
Mix everything together until the ingredients are well combined. Adjust the mayo, mustard, salt, and pepper to your taste preferences.
Assemble the Sandwich:

Lay out 4 slices of bread on a clean surface.
If you like, you can spread a little extra mayo or mustard on the bread slices.
Divide the egg mixture evenly and spread it over two of the bread slices.
Add Optional Ingredients:

If you want to add extra freshness and flavor, you can layer some lettuce leaves, tomato slices, or pickles/cucumber slices on top of the egg mixture.
Close the Sandwiches:

Place the remaining two slices of bread on top of the egg and optional ingredients to create two sandwiches.
Cut and Serve:

Use a sharp knife to cut each sandwich diagonally, creating two triangles or halves.
Serve your delicious boiled egg sandwich immediately, or wrap it in parchment paper or foil for a packed lunch.

Enjoy your homemade boiled egg sandwich! You can also customize it with other ingredients like cheese, avocado, or bacon for added flavor and texture.
