Ugali is a traditional Kenyan dish made from maize meal, serving as a staple food that pairs well with various stews and vegetables. Here’s a simple recipe to prepare ugali.
Ingredients
-1 cup maize meal (cornmeal)**
-2 cups water**
Instructions
1. Boil Water: In a deep pan, heat 2 cups of water over medium heat until it comes to a boil.
2. Add Maize Meal: Once the water is boiling, sprinkle about 1 tablespoon of maize meal into the water and stir to prevent lumps.
3. Mix the Mixture: Gradually add the remaining maize meal while continuously stirring with a strong wooden spoon. Keep mixing until the mixture thickens and begins to pull away from the sides of the pan.
4. **Cook**: Continue to stir and press the mixture against the sides of the pan to break up any lumps. Cook for about 2-3 minutes.
5. **Shape the Ugali**: Once cooked, transfer the ugali to a serving platter or a bowl. You can mold it by patting it down into shape and then inverting it onto a plate.
6. **Serve**: Enjoy ugali hot, typically with your favorite stew or vegetables.
P.S>
- For a softer consistency, you can add an extra ½ to 1 cup of water during cooking.
- Ugali is traditionally not served with salt, but you can add a pinch of salt to the water if desired or serve it with salted butter on the side
